Thai glutinous (sticky) rice flour (454g) by UP
UP Glutinous Rice Flour is made by soaking the rice first before processing it, which gives a smooth finish and is recognised as being the best rice flour.
Although it is called Glutinous Rice Flour, it is in fact Gluten Free & is made purely from Rice Flour.
Glutinous Rice Flour is used to make traditional Thai Desserts, usually those which are of a sticky consistency. It is also known as Sticky Rice Flour.
Store in a cool dry place, well sealed, for up to one year

Layer cake recipe
Dissolve 150g of white Thai palm sugar into 500ml of warm (not boiling) Thai coconut milk.
Once the sugar is dissolved pour into mixing bowl. To the mixture add 150g of UP glutinous rice flour and 100g UP tapioca flour and 1 teaspoon of salt.
Whisk the ingredients until smooth then strain the mixture and divide into 4 separate portions.
Layer one coloured portion into a tray about 3mm deep and steam in a steamer for 8 to 15mins until set.
Repeat with each coloured portion ensuring each layer has cooked and set before adding the next layer.
Allow to cool before chilling in a refrigerator overnight.
The next day, cut into small diamond shapes, top the roasted coconut and serve.
