Chilli peppers come in a wide range of varieties, flavours and sizes. People misconceive that chillies are all hot and spicy. Some chillies are mild, flavour packed and tasty. Being as there are so many varieties and ways to utilise their flavours is what makes a chilli pepper such a diverse ingredient.
Chilli peppers have been in the Americas dating back to 7500BC, with some evidence that they became domesticated in Ecuador as long back as 6,000 years ago. During the time of the Spanish colonisation period in Asia in the 16th and 17th centuries, the Chilli pepper was introduced to countries such as the Philippines, China, Korea, India and Japan.
What some people don’t understand in regards to chillies or chilli peppers is that the smaller varieties are infinitely spicier than large green chilli peppers. The smaller the chilli, the more explosive the flavour. The mild nature of large green chilli peppers make them more popular across the world, especially in countries that do not consume spicy foods in their everyday lives. As such, large green chilli peppers make for a more diverse cooking ingredient.
Thai cuisine always makes use of the vast variety of chillies that grow in the nation. All assortments of chilli peppers can be found on a normal every day Thai market or supermarket. The chillies, in general, are defined by the regions they grow within and this directly affects the local cuisine in that particular area. The Thais tend to sway more towards the smaller and spicier Thai chillies, as opposed to the large green chilli peppers.
