Indian Style Potato & Cauliflower Stir Fry
Inspired by the traditional North Indian recipe Aloo Gobi, our potato and cauliflower stir fry combines the taste of curry with the cooking method of stir frying to create a delicious and satisfying plant based meal.
While a traditional Aloo Gobi calls for fresh herbs and spices, our 5 ingredient recipe uses Patak’s Mild Curry Paste to achieve a fragrant and flavourful taste. This curry paste is not only for convenience, it truly brings your basic ingredients of potatoes and cauliflower to life!
This potato and cauliflower stir fry is a great gluten-free, vegan/vegetarian stand alone meal. You can also serve this stir fry as a side dish or expand on the 5 ingredients to make it heartier by adding chopped tomatoes or even minced beef, just be sure to add 1-2 extra tablespoons of curry paste to maintain the richness in flavour.
Ingredients:
- 2 Potatoes Wedged
- 700g Cauliflower Florets
- 3 Tbsp Mild Curry Paste
- 1 Onion Diced
- Handful of Coriander
Instructions:
- Sauté onion on low heat then follow by adding the potato, when almost cooked season everything in the pot with 1 tsp of salt and 1 tsp of pepper.
- Next add the cauliflower and stir fry this until half cooked through, add more salt to taste if required.
- Follow by adding 3 tbsp mild curry paste to the pan, stirring throughout until all the ingredients are covered. Continue stir frying until the cauliflower is cooked through.
- Finally serve the aloo gobi stir fry and garnish with fresh coriander leaves (optional).
